In Greek mythology, there is a story about why the almond tree is blessed with its lovely light pink flowers in the middle of winter:
Phyllis, the queen of Thrace, thinks her beloved prince of Athens, Demophon, has abandoned her. But, unknown to her, he is slowly making his way back to Thrace after a battle. Despondent over her apparent loss, Phyllis commits suicide and the Gods took pity in her by transforming her into an almond tree. On a cold winter’s day, Demophon finally returned to Thrace and heard of Phyllis’ fate. He then ran to the tree and embraced it. The tree suddenly burst into blossom, a symbol of hope and constancy.
